Mix chicken broth, rice, garlic powder, onion powder, salt and pepper in the slow cooker. Cover and cook on HIGH for 2 hours.

This recipe uses Arborio rice. Arborio rice is a short-grain Italian rice that can be found in the rice section at the grocery store and Walmart.
Do not rinse the rice before adding it to the crockpot. You want the extra starch when making risotto. The starch is what makes the rice creamy.
What rice can I substitute for Arborio? You can really use any type of medium or short-grain rice to make the dish. Sushi rice works well in a pinch. Avoid is long-grain rice, like basmati or jasmine, as it doesn’t have enough starch content to get creamy.
